Feature Coffee: Nicaragua La Union

For generations, the Fiallos family has been growing some of Nicaragua’s most interesting coffees. Upon arriving in Nicaragua on a recent sourcing trip, we quickly realized that their farm, La Union, was the perfect place to look for our next feature coffee. Located in the lush, soaring mountains of Las Sabanas, Finca la Union embodies the highest standards in quality farming. Their coffee is grown and processed with an unparalleled level of precision and care, and the resulting cup is an extraordinary one.

When it comes to picking our feature coffees, we believe that the quality of life for the farmers needs to be on par with the quality of the coffee. After spending several days on the farm, we observed firsthand the Fiallos family’s commitment to providing safe working conditions and fair pay for their workers. We purchase this coffee directly from the growers to ensure that the farm receives the full value for their crop and can continue to lead their community as a responsible employer.

With careful attention to the processing of their harvested cherries, La Union consistently produces coffee that is flavorful and rich with delicate nuances. While developing the roast profile for this coffee, we found that a medium roast was optimal, bringing out hints of citrus and roasted hazelnut for the ultimate balance of sweetness in the cup.
